Tuesday is ERL Day

It's Ellie Day!  Hip hip hooray!  I've been busy growing bigger and bigger and learning new and exciting things.  I've gotten pretty good at escaping from my car seat with a little help from anyone willing to unlock the bottom buckle.  Getting up on my knees to crawl is getting easier and I'm able to move forward a little bit but I'm real good at moving backwards as well as spinning in circles.

I like to stand for short periods of time in my crib.  I like holding on to the sides so I can see everything.  I'm not bobbling as much as before when I sit up either.  I really don't care for laying down much anymore, I much prefer sitting up or bouncing around in my walker or jumper.  I made a fabulous discovery this past week.  I have found my thumb and not only does it feel good on my sore gums from teething, it has a pretty good taste.  I'm not very fond of that finger in my eye, but seems I was exhausted from all the crawling and standing I had been doing to take notice of it.
I'm guessing this is what it would feel like to wear a parachute and leap out of a plane....not too bad, I can handle it, I know no fear!  I am a rough and tough rockin kinda baby girl :)

Monday Menu...Taco Dip & Pizza Dip - lazy anytime lunch/dinner/snack

TACO DIP
 
(2) 8oz. cream cheese, softened
1/2 cup sour cream
1 8oz. mild or medium salsa
chopped lettuce
tomato cubes
grated Cheddar cheese (or whatever you like)
sliced black olives (optional)
tortilla chips or nacho chips
Mix together cream cheese, sour cream, and salsa.  Pour into a pie plate or bowl.Top with chopped lettuce, tomato cubes and grated cheese. Add olives, if desired.
Serve with chips.

 PIZZA DIP
  • 1 (8 oz) package cream cheese, softened
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley
  • 1/4 tsp dried basil
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup pizza sauce
  • 2 tbs chopped green bell pepper
  • 2 oz pepperoni sausage, chopped
  • 2 tbs sliced black olives
  1. In a small bowl, mix together the cream cheese, oregano, parsley, and basil.
  2. Spread mixture in the bottom of a 9 inch pie plate, or a shallow microwave-safe dish. Sprinkle 1/2 cup of the mozzarella cheese and 1/2 cup of the Parmesan cheese on top of the cream cheese mixture. Spread the pizza sauce over all. Sprinkle with remaining cheese, then top with green pepper, pepperoni and olive slices. Cover, and microwave for 5 minutes. Serve hot.

Tuesday is ERL Day

Another day that's all about me...and what a week I have had!  To begin with I had a birthday...I turned 4 months old.  This is my birthday picture.  I went to the doctor last week for my checkup and I'm shooting right off the growth charts.  I now weigh 14lbs 12oz and I am now 25 1/2" tall. But let me get a few things straight here; that nurse needs to be a bit more gentle with those confounded needles and I hate when you put me on those scales with no clothes on!  Don't I deserve a little respect?
These are burp rags that my Grizzy made for me...some birthday present, huh?  Well, you see, I still have this reflux issue and there are days when I can successfully dirty up every single cloth within arms reach throughout the house.  This being said, a girl can never have enough wipe-up rags!
I heard this is how Elton John got his start.  Microphones are too heavy so I'll stick with teethers for now.
As far as my traveling abilities I still love to take steps while holding on to someone's fingers, I roll over constantly now, I'm getting pretty good at holding myself up on my hands and working on the knee action.  Not sure what had my attention but apparently it was really exciting from the expression on my face!
This is my Poppy!  I have recently decided that this is the best way to drift off to sleep.  Plus he doesn't mind it when I drool all over his clean shirt.  I love my Poppy alot, I even raise my hands up for him to take me now.
OMG, did you see the Bachelor last night?  I heard more lies out of those gals than enough.  It made me throw up a little in my mouth!  Disgusting!
There seemed to be a theme with my outings this week.  Whenever Grizzy and Mommy pulled into a drive up restaurant they seemed to attract birds of all kinds.  Here at the Sonic was a Mallard...he should probably lay off the fries in order to trim that waist!
Then when they went to McDonalds this guy tried to catch a ride.  I think he was having a staring contest with my Grizzy and from the looks of it Mr. Black Bird won that stare down
And before long this guy tried to get in on the action.  He pooped on my mommy's window and she didn't like it much at all.
then finally before we could get out of the parking lot this guy returns and boy did my mommy squeal.  She was afraid he was really coming in the car.  What you can't see is that by now Grizzy's car is covered with birds.  I felt like I had been sucked into a Hitchcock flick.  Well, that's all about me for this week.  Until next week......here's to full tummies, clean diapers, cold teethers and rocking chairs.

Wordless Wednesday ~ Sunset

Tuesday is ERL Day

Well, as you can see, I can't talk right now...I'm busy drooling and dreaming on my Poppy's shoulder.  Poppy rocked me to sleep tonight, although my Grizzy usually rocks me, Poppy wanted a turn because he said he knows how to make me stop fussing.  And yep, he sure does.  I love my Poppy.

This is my new toy that Grizzy bought me this week.  I love looking at myself and I love watching milk drool from my mouth.  If I have to wear these silly bibs, I might as well have good reason.
Well, I did manage to take my mommy and Grizzy to the mall this week.  I dragged them kicking and screaming into the Build*A*Bear Workshop where I got this sweet Rocker MP3 player Teddybear.  Now who's crib is the most awesome? 

And, I guess as payback for the cool bear, Grizzy made me suffer through the purchase of these shoes.  She says if I'm standing and trying to walk around that I need shoes (mom says it's an old lady thing and I don't have to wear them except with Grizzy)  Mom was most horrified when she saw that I had bells on my laces the next day.  Mommy just really wasn't having that 'cuz she said we don't live in the 80's.  lol, my mommy is so funny.  I love her so much.  And my white sandals look pretty cute too.  Now if only the weather would stay warm so I could wear them; oh, wait, must schedule a pedicure first...can't be seen in sandals without my nails being done...oh golly, so much to do when you're a girl!

Monday Menu...Cold Spaghetti Salad

COLD SPAGHETTI SALAD

1 pound spaghetti
1 cucumber, peeled and diced
3 large tomatoes, diced and drained
1 bunch green onions
1 (2 oz.) McCormick Salad Supreme
1 (16 oz.) Wishbone Italian salad dressing
 
Cook, rinse and drain spaghetti. Mix together spaghetti, diced vegetables, McCormick seasoning and as much Italian salad dressing as needed. Toss and chill overnight. 
 
I like to serve on a bed of crisp lettuce and a side of broccoli steamed with sea salt.

Tuesday is ERL Day

Well here's to another day all about me.  This past week has been a rather calm one considering last week was such a busy one.  Mommy and Daddy spent a few evenings in the nice weather skateboarding so I got a few extra cuddle times with my Grizzy.  I got to have 2 sleepovers at Grizzy and Poppy's house and I even slept through the night; 8 hours straight, finally!  Grizzy likes to put bows in my hair after I have a bath.  Mommy takes them out the minute she sees them...I guess it'll be just something between me and Grizzy.  lol

Well the first picture is of the "prissy" me as Grizzy calls it.  This picture is of the ruff n tuff sk8r kid me.  Poppy covered up my bow with his work hat.  So much for that fresh shampoo'd hair, now it's all sweaty and stinky.  lol

Monday Menu...Banana Cupcakes with Chocolate Peanut Butter Frosting

I am feeling a strong sense of a sweet tooth today.  With fabulous spring like temps and sunshine today I felt compelled to prepare something special.  This way any leftovers can be enjoyed over the course of the next 3 or 4 cold, rainy days; not to mention how wonderfully they will brighten up the gloominess with their sweet southern goodness. 


BANANA CUPCAKES

1/2 c butter
1 c sugar
1 c bananas
1 egg, beater
1 1/2 c flour
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla

Mix above ingredients, fill muffin tins 1/2 full. Bake at 350 degrees for 15 to 20 minutes.

Chocolate-Peanut Butter Frosting

1/2 cup butter
1/4 cup milk PLUS 2 T milk
1/4 cup cocoa
16 oz powdered sugar
1 tsp vanilla extract
1/2 cup chopped peanuts, optional
1/4 c peanut butter

Combine butter, milk, and cocoa in a saucepan; bring to a boil, stirring constantly. Remove from heat. Add remaining ingredients; beat at medium speed of an electric mixer until smooth.  Ice cupcakes when cooled completely.  Garnish with chopped peanuts and a chocolate curl.

Tuesday is ERL Day

Tuesday's are my days because I was born on a Tuesday.  This past week has been a very busy one once again.  I went on a road trip to visit cousins in NC, had a sleepover with my Grizzy and Poppy, went to a babyshower for my cousin who is due sometime between now and March and I celebrated Valentine's Day.  Whew, life is busy and only getting busier with me wanting to stand up so much and play in my new jumparoo and trampoline bouncy walker
